The Darjeeling himalayan railway in Darjeeling, India is the most scenic railway according to my opinion. I have been there many a time. It is a UNESCO world heritage itself. The railway was opened in th year 1884. Still today it runs on the same steam engines that used to ply at that time.Along the way you can see Mt. Everest and Mt. Kanchenjungha the world's third highest peak.

Amtrak train from San Francisco to Reno.  Breath taking views, red wood trees, Lake Tahoe.  You have to ride it to believe it.  Also The Wine Train through Napa Valley is really beautiful during the fall.
