I'd use the iTunes mp4 format, but it says 'audio only.'

An easy to use ONLINE media converter is mediaconverter.org.

There you can just copy/paste the adress of the video and then choose the format (which is MPEG-4) and don't choose the highest quality because it will make it harder for your Ipod to run the video. Then just click convert.
