  1. If I had to choose one of the three as a profession, I'd choose mechanical because, well, that's just what I'd probably enjoy more...

It really depends what type of things you want to work with and what type of person you are (sounds corny).  IT engineering is a lot of data, and generally has you sitting at a desk quite a bit.  Computer engineering tends to be a lot of code base, similar to IT, however less geared to networking and more into development of software.  Mechanical can be analitical, however instead of working with computer codes and that sort of data, there's a lot more materials engineering, thermodynamics, fluid flow, and friction taken into account.  There are other types of engineering as well, such as electrical, materials, civil, chemical, nuclear, ag and so on.  My degrees are in mechanical, nuclear, and ag engineering (so far).  Computers aern't really my thing since other than the keyboard, they're really not hands on.
