Fair warning... Deore LX will be replaced in the 2009 model year with Deore SLX. LX will become a trekking group.

It depends on the part you're talking about.   The weight differences for most of it are really tiny....not enough to worry about.  Some items such as the shifters are noticeably better quality.  The derailleurs are pretty similar and the LX rear actually works very well.  Hubs....?.....not much difference at all other than slightly better surface treatment of the bearing races on the XT.  

I'd stay away from the Deore line, but once you get to LX, XT, and XTR, it's all good stuff.   If you don't need to have the XT bling factor, then a very smart choice would be to run a full LX group, changing these parts to XT:  shifters, rear Shadow derailleur (M752), and possibly the cranks if you're not going with another non-Shimano brand.  

I was a die-hard elitist when it came to parts for a long time....when I actually rode some of the cheaper stuff, I was very surprised to see how well it performs (at least the cheaper stuff within that last 4 or 5 years, anyway).   When you break everything down and examine the specs, the differences in function and features are often pretty negligible....but the difference in price is huge.  Some people need the cool-factor of having a full gruppo or the latest greatest race parts, however.   I've almost always gone XT or with other high-quality parts, but these days, there's nothing wrong with the next step down either.  Trickledown quality has really benefited bike parts.

deore LX is the lower end componentry of shimano.

XT is better than LX, XTR is better than XT

better generally means "lighter or more durable"

more so the former
