two egg mcmuffins is the one which is correct. the word egg describes or modifies the main subject which is McMuffins. Therefore, egg should not be written in plural form since it functions as an adjective in this case.

The correct way to order is "2 Egg McMuffins".  If you really do want two eggs on one McMuffin then order as "1 Egg McMuffin with 2 eggs".
