  1. i think it must be 'that' as it is part of a statement, and 'which' is part of a question.

  2. That

  3. To begin with, you should place the phrase to modify differences, not education.

"I was fascinated by the gender differences that she unearthed in education."

Most style guides do not make a clear distinction between the use of "that" and "which."  My advice is to use "which" when you are identifying "which ones" out of a group of items.  Such as saying "these are the pieces which she chose," out of the whole collection of pieces she could have chosen.

If you wrote " . . .differences which she unearthed . . .,"  that would mean that you are writing about those differences which she found, and also noting those which she did not find.

By using "that" you are saying that you are going to write about what she found, on the assumption that there was nothing more to find.  In this case, your fascination with what she found is what matters here, not her detective skills.

"I was fascinated by the gender differences that she unearthed in education."

  4. that.
