The most popular is the Universal Studio tour.

Universal Studios is an amusement park and studio tour. Disney does not allow public access or tours at their studio. You could check Warner Brothers studios to see what they do.

Universal is geared up for public tours though. None of the studios is gonig to take you on set to watch filming going on as part of the public tour. If it's happening while you are on the tour you may see something going on, but they won't let you just stand around and watch.
