Definitely Nick's Seafood Restaurant in Darling Harbour if you're willing to drop a few extra dollars. I spent 4 months in Sydney and had the best meal here.

Doyles on the harbour is great- expensive, but then again we are talking seafood

Try...the Garden Buffet at Star City Casino! You get Oysters, Fried Calamari and Prawns....! And other stuff as well.
