  10. Don't know if this is the most delicious, but it is d**n good

    Ingredients

Aubergine, Courgette, mixed peppers, buffalo mozzarella, fresh parmesan, lasagne pasta, pasata (tomato sauce or a good jar of pasta sauce - not dolmio), garlic, Onion & fresh basil

Slice aubergine (about 1/2 cm thick), courgette (fairly long & quite thin) & mozzarella

Coarsely chop onion, (in half then quarter each half) and peppers , peel about 4 or 5 garlic cloves and leave whole and throw the whole lot into a baking tray - put a good slug of olive oil over the veg mix and a pinch of salt & pepper. Cook on a medium - high heat (gas 6, elec 180 ish) for about 20-30 mins, until beginning to char.

Get out a casserole dish or oven proof container and put a couple of spoonfuls of tomato sauce in the bottom, then layer some lasagne pasta, on top of that put a layer of your roasted veg mix then slices of mozzarella and a few leaves of basil.

Repeat the process until you can't fit any more in your dish or you run out of ingredients! Top it off with some grated fresh parmesan & a sprig of basil and bake for another 20 - 30  mins same heat.

Serve with some fancy bread and Enjoy!
