  2. I think the favorite among my friends is my adobo recipe:

    8 chicken thighs

    1/4 cup soy sauce

    1/2 cup vinager

    1 Tbsp black pepper (or to taste)

    2 Tbsp garlic (or to taste)

    1 bay leaf

    Put it all together in the slow cooker and let it go all day.  Serve with white rice.

I love vegetarian Mexican food because it's easy and usually very good for you!  Even if I make my own tortillas with corn flour!  And you can use alternative cheeses if you're a vegan.  But I also love chili, and other people always compliment me on my chili, too, even though it's never the same chili twice.  My secret to making good vegetarian chili is to use color.  If I've got something red (red onions, red pepper, tomatoes), something yellow (yellow peppers, yellow tomatoes, corn), something green (cilantro, green pepper, green onions, celery), something white (lots of garlic and onions), even something purple (purple peppers), I saute it all in olive oil, add a couple diced tomatoes and a can of tomato sauce, add some tvp (texturized vegetable protein) or tofu, add some louisiana hot sauce or a half cup of Pace Picante sauce, add some water to the consistency I like, and then let it all simmer for at least an hour (the longer the better).  It always turns out great.  When I serve it I add some raw onions and cheddar cheese on top.

  5. Cheesy Bean and Cheese Enchiladas

    Ingredients (use vegan versions):

        1/2c flour

        1/2c nutritional yeast

        1 teaspoon salt

        1 teaspoon garlic powder

        2 cup water

        1 teaspoon mustard

        4 tablespoon margarine

        10 tortillas

        2 small cans enchilada sauce

        3 cans beans (white kidney, pinto, black), drained

        2 medium onions, chopped

        1 can olives, chopped

        1/4 cup chopped cilantro, 1/2 cup salsa (optional)

    Directions:

    In medium-large saucepan, combine flour, nutritional yeast, salt and garlic powder.  Add water and mix thoroughly.  Heat on medium heat until bubbling and thick.  Remove from heat and add mustard and margarine.  Set aside 1/2 cup of cheese sauce in separate container.  Add onion, beans, olives, cilantro and salsa to sauce. Mix it up.

    Pour a 1/2 cup of enchilada sauce in the bottom of a 9x13 pan.  Place a tortilla in pan and cover in enchilada sauce.  Spoon in filling.  Roll and push to one end of pan.  Continue until all tortillas filled.  Pour the rest of the enchilada sauce on top and then spread reserved cheese sauce on as last step.  Bake at 350 until brown, 30-45 minutes.

    Serves: 6, Preparation time: 45 min
