It depends what category you refer to.

There is the Ice Hotel in Sweden, which is built from blocks of ice each winter and then melts in the summer.

There is the Burj al Arab in Dubai, the world's most expensive and luxurious hotel.

There is the Raffles in Singapore, which is very colonial and famous, along with the Mount Nelson in Cape Town.

The plain famous ones are probably the Ritz in Paris (where Princess Di spent her last evening) and the very famous Waldorf Astoria in New York (which actually belongs to Hilton now)
