Slovenia is my choice! I spent a fabulous week there in July 2007 and lost part of my heart forever to that country! It's incredible to notice that one can actually have spas, beaches and sunshine as well as great mountains and cooler climate in one and the same country! People there are very very friendly and speak great English, and it's cheap and safe place. A true hidden gem for most of the people, who seem to underrate Slovenia very badly. I just can't understand that kind of thinking!
