Is rennet the microbe in Brie Cheese, i am not sure what rennet is,so i dont know if it is the microbe.

  2. Rennet isn't a microbe, it's an enzyme.  Sometimes commercial rennet is produced by microbes, but those microbes don't go into the cheese (they just manufacture the rennet ingredient).

    Molds are used in brie production.  Penicillium candidum, Penicillium camemberti and/or Brevibacterium linens, then it's aged in a cellar for at least four weeks.
