if it's a joint where people can sit and enjoy their coffee with a cookie or something Steamin' Joes is best. people enjoy the friendly and familiar.

if you just deal in beans and a taste with no place to sit Steamers Fine Coffees is best. in that case you must stick to what describes you. are all your coffees from the highlands, or signature, or roasted?

Steamer's Fine Coffees or Steamer's Signature Coffees would do well.  I'm curious to know why you haven't used the apostrophes appropriately except as a contraction (Steamin' Joes.)  There should be one in Joe's and there should probably be one in Steamer's.  Please run these by someone with a fine grasp of English grammar before ordering your signs.

That sounds, good.  Kind of gives me the feeling and image of a very good looking woman's signature hand writing.  Pretty, good, fine.

It kind of sounds professional, sounds like a place I would visit for some coffee.

It also goes good with Steamers, Signature and Steamers.

Next in line I would pick Steamers Fine Coffees.  But it sounds a little to simple over the Steamers Signature coffees.

none they all have steamers in the front and that just does not do it.. I can see steam as in froth the milk, but just not working for me... if i had to choose i would go with steamin Joe's coffee... SJC yep that kinda works i guess
