  1. for steak.. red potatoes. dont peal them, just rinse thoroughly and cook.

    if you want potato salad, or mashed potatoes, use red-skinned ( for anything boiled or sauteed reds are best; and use Garlic, by all means)

I think all the answers are good.  However, I have recently fallen in love with something different you may want to try: fingerling potatoes.  They are basically baby potatoes and usually come as a mix of red and white potatoes.  I like 'em just baked/broiled, grilled, or sauteed with nothing but salt, pepper, and olive oil.  They don't need any fatty additions like butter, sour cream, or cheese.
