Doyle's is pretty standard for excellent prawns and other seafood. Plus Nick's and Jordans at Darling Harbour.

Don't know about Sydney, but a couple of hours down the road, the Tattersalls Hotel Goulburn, don't be put off by the pub, go out the back, great beer graden and the best garlic prawns ever... along with just about everything else they serve... (and cheap)
