What about in Gerry's Grill in Mall of Asia, loved the food there.

Cant remember if they do serve norwegian salmon sandwiches but you can try Almon Marina (branches in SM malls). Or maybe you can also try Santi' Deli.(various locations in metro manila). Good luck
