Which sat subject test (science) is the easiest?

i'm planning on taking sat subject tests in oct. i think i'm going to take math 2 and a science.. not sure which one though. i've heard that biology is the easiest but whats the difference between e and m? do you have to choose which one you have to take or are they combined?
