Whipped Cream how long will it hold up?

I am making a trifle with whipped cream and heavy apple cake. If I make the whipped cream now, will it hold up OK for 4-5 hours? How does everyone whip cream.. with an elec. mixer?

  1. Take it from a chef if it starts to weep or fall, just re-whip it until it comes back, sweeten it with icing/powdered sugar and it last longer, the starch is a way of preserving the peaks.


  2. like someone else just wrote you, you can re-whip it, but I would just make it right before dinner, it doesn't take long, and I use an electric mixer, which is faster than by hand.  Sounds like a great dessert you are planning!

  3. This will hold up longer

    CLARIBEL'S STABILIZED WHIP CREAM

    1 tsp. plain gelatin

    2 tbsp. cold water

    1 c. whipping cream

    3 tbsp. powdered sugar

    1/2 tsp. vanilla

    Add gelatin to cold water in small pan. Set this over boiling water until it is clear. Do not stir. Cool to room temperature. Meanwhile whip the cream until it is medium thick. Pour gelatin mixture into the center of cream while mixer is going. Pour in the gelatin all at once and continue beating. Add powdered sugar and vanilla. Beat until cream stands in stiff peaks. Use as frosting for cakes or dessert decoration.

  4. Whenever I make a trifle, I use Dream Whip instead of Whipped Cream. I make my trifle the day before I serve it, cover it with saran and put it in the fridge until ready to serve.  It works out great and everything stays the way it's supposed to.  I make two kinds of trifle.  One with chocolate cake (I use the rounded tops of the cakes I've made for birthdays that I have frozen), sprinkled with coffee, topped with either vanilla or chocolate pudding (homemade or out of a box), and topped with the Dream Whip then topped with toasted coconut and sliced almonds.  The second is yellow cake tops drizzled with marischino cherry juice, topped with vanilla pudding then cherry pie filling (homemade or store-bought), another layer of cake, pudding and cherry pie filling then the Dream Whip, toasted shredded coconut and toasted sliced almonds.  I've used apple filling in the past too - that works very well as well.

    My great-aunt used to put some instant vanilla pudding in with her whipping cream to help hold it for a longer period of time.  You could do that as well if you want.  I whip it with an electric mixer in a bowl I've placed in the freezer to make it cold.  The whipping cream is refrigerated and nice and cold as well.  

  5. Yes electric mixer is best way to whip cream. To get it to hold up add a squeeze of lemon juice and stir in with a spoon after you have whipped the cream. it will hold up for days.
