As far as a legit match before he started to do side work, his last "real match" was against The Rock at Wrestlemania. He was still old, but it was his way of passing the torch to The Rock just like Andre the Giant did to him at Wrestlemania III. Anything after that was strictly for promotion and publicity to get more people to tune into WWE while they were going through their usual creativity slump every so often.

Hulk Hogan defeated The Big Show (Paul Wight) at Clash of Legends on April 27, 2007.  I believe he's last match in WWE was at Saturday nights Main Event when he beat Randy Orton in 2006.

Jarvis is right.  It was Paul Wight (Big Show) in Memphis.  It was a belated way to remember Hogan and Andre and the bodyslam.  Show was a last minute replacement at Hogan's request.  I believe Jerry Lawler was to be there, but WWE stopped that form happening.
