  1. My mom started using this recipe about a year ago.  I normally don't care for banana bread, but I like this.  The cream cheese makes it really moist and light colored.

    Cream Cheese-Banana-Nut Bread

    ¾ c. butter, softened

    8 oz. cream cheese

    2 c. sugar

    2 large eggs

    ½ t. baking powder

    ½ t. baking soda

    3 c. flour

    1 ½ c. bananas, mashed (about 4 medium)

    ½ t. salt

    1 c. pecans, chopped & toasted

    ½ t. vanilla

    Beat butter & cream cheese at med. speed until creamy.  Gradually add sugar, beating until light & fluffy.  Add eggs, 1 at a time.  Gradually add dry ingredients to butter mixture, beating at low speed just until blended.  Stir in bananas, pecans, & vanilla.  Spoon batter into 2 greased & floured 8 x 4" loaf pans.  Bake at 350° for 1 hour, or until toothpick comes out clean.  (8 little loaf pans at 350° for 30 minutes.)  Cool on wire racks for 10 min.  Remove from pans, and cool 30 min. before slicing.

    Ingredients

    1-15 oz. can pumpkin

    1 cup dehydrated cane syrup

    2 eggs

    1 1/2 cups mashed banana (2-3 bananas)

    2 cups all-purpose non bleached flour

    1 teaspoon baking soda

    Directions

    Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9x5 inch pan.

    Cream margarine and sugar until smooth. Beat in eggs, then bananas. Add flour and soda, stirring just until combined.

    Pour into prepared pan and bake at 350 degrees F (175 degrees C) for about 1 hour (or till toothpick comes out clean). Remove from pan and let cool.

    1 cup butter or margarine

    2 cups sugar

    4 eggs

    1/4 teaspoon salt

    2 teaspoons soda

    4 cups flour

    6 large bananas, very ripe, mashed

    1 cup finely chopped pecans

    Preparation:

    Cream together butter and sugar. Add eggs, one at a time, beating after each addition. Sift dry ingredients together; add to creamed mixture. Stir in bananas and chopped pecans.

    Pour banana nut bread batter into 2 well-greased loaf pans; bake at 325° for about 1 hour and 15 minutes, or until a toothpick inserted in center comes out clean. This banana nut bread recipe makes 2 loaves.
