  1. You want a genuine barbecue recipe? Low and slow over wood?

    Here's my usual rub

    1 part black pepper

    1 part salt

    1 part paprika

    1 part cumin

    1 part hot pepper

    1/2 part celery seed

    Some people add brown sugar. I don't. You can also use onion powder, garlic powder, mustard seeds, etc., but for me the most important parts are the salt, pepper, a little heat from the hot pepper, and a little cumin for spice. The paprika contains a lot of natural sugar, so that helps to form a nice caramelized crust on the ribs. Also, try experimenting with "sweeter" spices like allspice, fennel, coriander seed, and even a little bit of cloves (but be gentle on the cloves). Grind your spices from whole, if you can, they taste much fresher and more pungent that way.

    Wash your ribs and pat dry. Apply cheap yellow mustard (this will help the rub stick). Liberally sprinkle on the meat.

    Smoke ribs at 200-250 with the wood of your choice. (I like hickory and white oak.) Ribs will take anywhere from 2 1/2 to 3 1/2 hours to be done, perhaps even a little more, depending on temps and meat.

    You could also do this over indirect heat on a Weber kettle. If you want to try to do it in an oven, it'll work, too, but you won't have any of the wood/charcoal flavor. Baby backs respond well to higher heat, too, so you could push the temps up to 350 or so if you want. Adjust cooking times accordingly.

    As for sauce, some people baste while cooking. Some people add sauce at the very end and finish the ribs over higher heat to caramelize. Others (myself included) don't touch the ribs during the cook (except to rotate or flip as needed) and serve sauce at the table.
