Mother Nature did.

We just learned how to collect it..  It's believed that alcoholic beverages were first made by the Egyptians as far back as 3000 years ago.

In the middle ages, Arab alchemists are believed to have figured out distillation of purer alcohol than what brewing makes by itself, although it wasn't for consumption at the time.
