It's like saying, who invented the toothbrush or who invented the soft bed

The evaporative refrigerator (earthenware pots to keep drinking water cool in summers) were invented 3000 or more years ago.

The Moghuls (500 years ago) used jute mats soaked in water as curtains to keep cool in summers

Any caveman in a desert 10000 years ago would have the common sense to splash water on his clothes / hair to keep cool

Convection of course. The cooled air is physically propelled by a fan.
