I'm a little dismayed at how many people think of him as the guy that got bit by Mike Tyson.

Evander is one of the most accomplished boxers that ever lived, and probably gave the sporting more more entertaining heavyweight fights than any boxer ever.  While everyone remembers the bite-fight, folks don't seem to remember the way he dismantled Tyson in their first fight, and just how competitive and exciting that fight was.
