like a chewy but crispy and soft cookie a bit like millies cookie

  1. CHOCOLATE CHEWIES...YUMMY!!!! = )~

    2 cups (about 8 ounces) chopped pecans

    2 1/4 cups powdered sugar

    1/4 cup plus 2 tablespoons unsweetened American-style cocoa powder

    2 tablespoons all-purpose white flour

    generous pinch of salt

    3 large egg whites

    3/4 teaspoon vanilla extract

    1 ounce bittersweet (not unsweetened) or semisweet chocolate, grated

    Preheat the oven to 325 degrees F. Line several baking sheets with parchment paper.

    Toast the pecans for between 5 and 10 minutes, stirring occasionally until fragrant and slightly brown. Remove from oven and let cool.

    In a large bowl, mix together the powdered sugar, cocoa powder, flour and salt. With an elextric mixer on low speed, beat the egg whites one at a time into the powdered-sugar mixture. Add the vanilla and beat for 1 1/2 minutes on high speed, scraping down the sides several times. Fold in the pecans and the chocolate until evenly incorporated.

    Drop the dough onto the baking sheets by heaping tablespoons, spacing about 2 inches apart. Bake the cookies, one sheet at a time, in the middle of the oven for 15 to 18 minutes, or until dry on the surface but soft in the centers when pressed. Reverse the sheet from front to back halfway through baking to ensure even browning. Slide the cookies, still attached to the parchment onto a wire rack. Let cool completely, then carefully peel the cookies from the parchment. The cookies can be stored in an airtight container up to three days or in the freezer for 1 month. Makes about 2 dozen cookies.


  2. this is my special recipe of cookies. i make it like every other day! I hope you like it. Yield- 15-20 cookies. (maybe more, because i usually eat some of the batter!! It's just TOO good!)

    Ingredients:

    ¾ cup whole wheat pastry flour

    A little less than ¾ cup light brown sugar

    ½ tsp. salt (a large pinch or two)

    ¾ tsp. ground cinnamon (add as much as you like)

    ½ tsp. baking soda

    ¾ stick butter, softened

    1 egg

    1 teaspoon vanilla extract (or a tiny bit more if you want)

    3 mashed Nature Valley Oats and Honey bars

    Directions:

    Preheat oven to 375 degrees F.

    In a large bowl, stir together flour, brown sugar, salt, cinnamon and baking soda. Soften the butter (I do it in the microwave) until it is very soft. Let it cool to about room temperature. Crack the egg in the bowl and whisk. Put in vanilla. Next, put in butter, and then whisk it until smooth. Batter will be thick.

    Take out 3 Nature Valley Oats and Honey granola bars (they come two in a package, so six bars total). Smash two at a time in a Ziploc bag (I use the bottom of a ladle to smash it). When they’re all smashed up, add them to the cookie dough. Mix it with a rubber spatula until the granola is mixed in well.

    Measure about 1 ½ teaspoons of batter onto a cookie sheet for each cookie. You will have to do batches. Bake for 8-12 minutes, depending on the size of your cookie. They will be very soft when they come out, but will harden as they cool. Wait 10 minutes before you put them on a plate.

    These cookies go well with strawberry/raspberry jam. I like to just put some on top!

    1/2 cup all purpose flour

    1/2 tsp baking powder

    1/4 tsp baking soda

    1/4 tsp salt

    1/2 tsp ground cinnamon (optional)

    1 tbsp butter, room temperature

    1/8 c plain apple sauce

    1 large egg

    1/2 tsp vanilla extract

    1/4 cup white sugar

    1/4 cup brown sugar

    1 cup quick cooking oats

    1/4 cup chocolate chips (optional)

    Preheat oven to 375F. Line a baking sheet with parchment paper.

    In a medium bowl, whisk together flour, baking powder, baking soda and salt. Add cinnamon if using raisins, instead of chocolate chips.

    In a large bowl, cream together the butter and the sugars. Beat in the egg, followed by the applesauce and the vanilla extract. Working by hand, stir in the flour mixture and the oats until just combined and no streaks of flour remain. Add chocolate chips or raisins just before the batter comes together.

    Drop tablespoonfuls onto the prepared baking sheet. Bake for about 9-12 min at 375F. Cookies will be light brown at the edges, but will not get as dark and golden as regular cookies.

    Let cool on sheet for 3 or 4 minutes, then transfer to a wire rack to cool completely.

    Store in an airtight container.

    Makes 1 dozen cookies.

    Both cookies are healthy choices.

  3. Ok the ingreidiantas you need are at walmart, go into the cookie section and buy some cookie mix then buy it and walk home then cook it then eat em!
