When referring to your father, it is technically acceptable to use either "dad" or "Dad". More conventionally you would use "Dad" when you are directly addressing him, and "dad" when you are speaking about him.

"I" is a subject pronoun and should always come second if you have a compound subject.

the trick is to say the sentence as if it was only you:

"I farm about"

sounds a whole lot better than

"Me farm about"

"My dad and I farm about"  is correct because I is part of the subject so it needs to be in the nominative (subjective) case.  Me is incorrect because it is in the objective case used in prepositional phrases and as direct objects.  The word dad is capitalized only when you use it as his name, thus making it a proper noun requiring capitalization.  However, when you say "my dad," or "his dad" or "Mary's dad" it describes a relationship, so it is not a proper noun and does not required a capital.

You wouldn't say "me farm about," so "My dad and me..." doesn't make sense.

And 'dad' is only capitalized when you use it as a name, like, "Dad and I went to the store." If you say "My dad and I," you don't need to capitalize 'dad' because you're not saying it's his name.
