Why are 'Special Kurzi Dishes' so expensive?

  2. The Kurzi dishes are a specialty item.  They generally take long prep time that is very intensive.  Most restaurant foods can be made in 5- 10 mins (not including time in oven etc) but even while the kurzi is in the oven you have to baste it every 20 mins for 2 hours.  

  3. it depends on their recipe.  Ã‚£60 isn't much, a restaurant in Islington used to charge £400 for a whole lamb kurzi (and that's 10 years ago!)

    The reason is that they use a whole cut of meat, and marinate it for 1-2 days.  Normally they use cheaper cuts of meat fir Indian meals, but the meat has to be goodquality and fresh for Kurzi.

    I made it once, with half a lamb boned and rolled, and marinated for 2 days. it was for a friends wedding, they've since divorced but people still remember the lamb kurzi

    The traditional way to cook it is to dig a hole, cover the bottom with dry cow pats, set fire to them, cover with cinnamon sticks, put the lamb in and cover and seal.  I just did it in the oven cooked with gas, I don't think the cow pats would have gone down well and I wouldn't have fancied cleaning the oven afterwards.

    What meat is the kurzi?  Some places do a large chicken, but I'm sure that wold cost less - as a rule the cost of ingredients are 1/3rd the price to you. .If it is chicken it should be stuffed with spiced lamb keema, peas and potatoes.
