  1. Because archaeology is not an EXACT science.  Different opinions often originate from observing the same data set in that field.

  2. Because Archeologists work with too many unknowns when they try to put the puzzle of the past together, they will always argue about what the missing pieces look like, or if a piece of the puzzle they are examining actually belongs with that puzzle.  Take 100 large puzzles, now throw away 3/4 of each puzzle & mix all the remaining pieces together, then try to put together a puzzle so you can draw a picture of what the puzzle represents.  This is the situation Archeologists face.

Some of the pieces of the puzzle will remain lost forever, but human curiosity dictates we know all we can.

  3. Of course there's still debate.  There's an awful lot of past, and not always all that much information to be gleaned about it.  Combine that with people's lack of respect for their own past, which prevents archaeologists from having the time and the funds to conduct a proper dig, and you have a difficult situation.

All is not hopeless, though, and we do know a lot more than you're implying.  I mean, you try to figure out the day-to-day life of a people when all you've got to go on are some flint chips, a fragment of pottery or two, and a stain in the ground.  There's a lot of wiggle-room for interpretations, and I think we've done a pretty good job, considering what we've often got to go on.
