Why are my breakfast burritos coming out so watery?

I'm using egg beater egg whites, cheese, and turkey. I sauteed some veggies in a separate pan and added them to the uncooked egg whites. Are the veggies making the burritos watery? How can I add veggies to the eggs and cook without having watery burritos? Please help.....thanks!

  1. all veggies give off moisture when cooked....you can cook off the moisture by cooking them longer.or you can remove them with a slotted spoon so most of the juice stays in the pan.


  2. What kind of veggies you are using, tomatoes have lots of water.

    You might not be letting water evaporate enough when you saute the veggies.

    Maybe let the sauteed veggies rest before adding them to the eggs, maybe even get cold so they loose some of the water. Just an idea.

  5. You are probably overcooking the egg whites, which denatures the protein and releases water.

    Saute your veggies w/ a bit of salt, to help extract excess water.  Then put your egg beaters into a pan.  About the time they start kind of "scrambling" and firming up, add your cooked veggies (don't add them to the raw eggs) and stir well.

    Depending upon how many egg whites you are using, and how strict your diet must be, you may consider adding 1 whole egg (w/ yolk) for every 2-3 egg whites.  Just helps smooth things out, add a bit of color so it's not so anemic-looking, as well as flavor.

  6. Okay do not add flour to the eggs, and no need to sear cold cut turkey.  

    Why not saute the veggies, put them on a paper towel to drain and then add everything seperate. I've not used egg beaters but it shouldn't be a problem. Also what veggies? Like onion bell peppers and mushrooms? Mushrooms release a Lot of water when cooked, so keep cooking them until all the moisture has gone out and the mushrooms have turned a nice brown color.

  7. Are you using fresh turkey or cold cut turkey? If cold cut turkey then it might need to be seared first to release extra water it's retaining. If fresh turkey, then it might be the veggies. Try straining the sauteed veggies and patting them down with some paper towels before adding them to the egg mixture. If none of that works then add about a tsp of flour to the egg mix and it should zap up the extra moisture. Hope I could help you.
