Why are my cucumbers bitter?

We started a garden this year and have a cucumber plant. the thing has gone crazy. we harvest 3 to 4 cucmbers per day. we have harvested them from small to very large. when serving them we remove the skin some of them are very sweet and some have bitter places in them. what is causing this?

They are not ripe enough and may need some fertilizer to make the taste better.
