Oils are liquids because they have more unsaturations than do solid fats.  These unsaturations cause the tail of the molecule to bend, which means that the molecules have a more difficult time fitting together.  Saturated fats on the other hand do not contain these bends and have no trouble fitting together, therefore, they are solids.
