  1. It's only the pistachios that have an open or no shell at all that will turn green because they are exposed to direct sunlight. The green color comes from chlorophyll. Chlorophyll makes it possible for plants to convert carbon dioxide and water, in the presence of sunlight, into oxygen and glucose. During this process of photosynthesis, chlorophyll produces energy, in the form of sugary carbohydrates, which will power all of the plant's essential growth and development. This amazing molecule also gives plants their distinctive green color.

  2. The color of the kernel varies from yellowish through shades of green, which extends throughout the kernel. In general the deeper the shade of green, the more the nuts are esteemed.

  3. They come from green plant .

  4. The shell of the pistachio is naturally a beige color, but it is sometimes dyed red or green in commercial pistachios. Originally the dye was applied by importers to hide stains on the shells caused when the nuts were picked by hand. But this effected the pistachio nut inside the shell
