  1. High water content (92%) is the proximate reason, but the ultimate (historical) reason is selective breeding by growers for high water/sugar content.

  2. Because it absorbs more waqter during its development. This fruit is developed in summer where there are chances of dehydration of  the developing embryos and seeds. So during evolution the more water absorbing fruits have survived and they came under cultivation.
