Why bamboo cutting boards?

I was cutting something today on my cutting board and I started thinking... Bamboo is porous so wouldn't it harbour bacteria and other nasty things?

  1. As long as you use bleach to clean it, no.


  2. surprisingly, wood cutting boards do not allow bacteria to flourish. not sure of what the reason is. also surprisingly, plastic is worse than wood.

    in any event, always clean your boards in at least hot soapy water and let them dry thoroughly before using again.

    never cut veggies on the same surface that you just sliced raw meat on. do the veggies first. or a second board.

    if the wood board starts to split, toss it. can't clean a crack.
