Why can't you eat a souffle once it sinks?

So like when people make a souffle, and it sinks theyre like its ruined. Why?? I dont get it, why can't you eat the souffle if it sinks?

  1. Well you could eat it but the texture would be a huge turn off. Making a souffle without eggs is extremely hard to do. You might be able to pull it off with OrgraN's No-Egg but while I hear that it is possible I have yet to find the product so I cannot speak from experience.   2. You can-it just doesn't taste as good and the texture is gooey.
