Why did God make the tree of knowledge of Good & Evil - and then forbid man from eating from it?

I don't understand why he would have made it, if he knew they would have given in.

Satan & other angels rebelled against God at some point in time. So perhaps it was just to see if humans would ultimately accept or reject God's way of life.

Also, it was to give us free will, the ability to choose what we wanted. We could completely accept and trust in God alone, or we could trust in our own wisdom.

God wanted Adam and Eve to be obedient to him. It wasn't that He wanted to keep knowledge from them. He is the Ultimate Knowledge Source. He just knew the the so-called Truee was part of the Satan's plan. God is much wiser; his thoughts are higher than ours.

Also, the fact that the very FIRST human couple messed up shows us that it's almost certain that someone would have at some point. If it's almost certain to have failed, and God can see the future, why would he do that.

I would find it a more convincing story if someone screwed up after thousands of years of getting it right.

What's even stupider(?) is the idea that Adam & Eve didn't know right from wrong UNTIL they ate from the tree of knowledge. Why would he punish them if they could not have known it was wrong until after the fact? If they were so "innocent" why would god put the tree within their reach, unless he wanted them to fail so he could punish them.
