  3. To preserve the meat. Salt draws out moisture from the meat curing it. This was used for hundreds of years to keep meat longer. Sailers salted pork, beef, cod, etc. Salt was a vauable commodity in ancient times to renassiance period.

  4. They didn't have refrigerators, so salt helped both to preserve the meat so that it lasted a little longer than usual and to cover the foul taste of rotting meat!

Layer of meat, layer of salt, layer of meat, etc.  When they got to the end they were scraping the bottom of the barrel.  The salt drew out the liquids and acted as a preservative.  The meat might be cooked in liquid or just eaten out of the barrel.  With refrigeration we do not have to do this anymore.
