  1. I'm a senior who is in NHS. You should only join IF you WANT to join. I would recommend it if you are going to college, because it looks good on an application. If you need a reason for your essay, just say something like "Education is something I take seriously," or "I like to be as well rounded as possible, so this is a big opportunity." If they invited you to join, this is probably true. You should definitely do it, though.

  2. write something like...

    - want to gain more leadership experience

    - you represent the ideal of the organization and feel you would be a good fit

    - want to continue to grow academically and surround yourself with people who have the same goals

    - talk about your mid and long term goals (college) and how the organization will help you get into the school off your choice

    - usually these clubs do community service- maybe mention that you're interested in becoming more involved in this aspect

Honestly though,  NHS is a college app filler.  You'll probably meet some new people, but the org itself won't do too much for you.
