What is the enzyme in apples and potatoes that cause them to oxidise and turn brown when cut open and the tissue inside is exposed?!

  3. apple has ferric ions... when it exposed to air and react with oxygen and it oxidises to form ferrous(brown colour).....

    thats it...  

    polyphenol oxidase is the enzyme.... it catalyse the above reaction....

    this is like steel(iron) gettin  (rust)brown colour when exposed to air and water...
