Culture that has been handed down through generations.  The Mayan Indians ground corn by hand and made tortillas which they used as spoons to scoop up food and as bread to wrap meats in.

Same thing as any other region of the world that has food preferences.  I am southern and I eat grits and country ham.  My ancestors cured their meat so that they could keep it fresh longer when they had no place to cool it.
