Why do most table lamps require you to turn the k**b 2 clicks to turn it on/off instead of just 1?

Because it is easier to install a 3 way at first instead of  the lamp not selling because it doesn't.  It makes the lamp universal.

Your lamp socket is designed for a 3-way bulb.  Basically you have the wrong bulb in the lamp.  If you change your standard wattage bulb to a 3-way bulb the each click on the k**b will provide you with a different brightness of light.
