  1. Do you mean vegetables? Because it's healthier.

  2. It actually takes more energy ,  in  the form of crops,  to feed an animal up than it does  to directly feed a human being with the plant crop itself. So eating animals is in some ways an inefficient use if you are a poor farmer on a subsistance diet.

It depends on the animal though. In poor areas people may eat a lot of chicken.  This may make sense  because the chickens do not need to be  fed on high  value foodstock and can scrape a living for themselves .

In contrast it wouldnt make sense to raise  high grade beef cattle because they would need high grade fodder and this fodder wouudl  ither have to be bought or raised on the land that had been used to raise  plant food  crops.

Thats why people  in poorer countrie  tend to eat less meat  - ultimately meat protein costs more to produce than crops.

  3. People live in over populated countries because they know that there are more people there. That there are more jobs to offer. More places to go. And more people to meet. They use plants because that is the most common place for food to be found at most common place for people to make, pick, or harvest their own food.

  4. You mean like wheat, rice, corn, etc?

It's simpler to grow and stores longer than non-plant (meat and fish) food.
