Why do people put their pineapples in saline solutions?

i saw someone the other day slice up the pineapple into cubes and put the cubes into in a salt and water solution. why was this done?

  1. To help the fruit preserve it's color if it's got to sit for awhile before serving or mixing with other ingredients.  

    I use a solution of water, salt and a little white vinegar when I'm preparing peaches, apricots or pears for the freezer.  It works great and is much cheaper than Fruit Fresh.

    Note:  It doesn't result in salty tasting frozen fruit.


  2. Salt is a preservative so I guess that's your answer.  I never do it but if I was wanting to keep it for a while I would probably squirt some lemon or lime juice on it.
