Because the horse riding at Belmont wouldn't think of running faster if not for the demonstrative yelling of the degenerate gambler in the horse room in Vegas.

They are cheering on their favorite horse or a horse they placed a bet on. Just like any other sport where they cheer on a favorite player or team to win.

Why do people yell at home or in a bar when they are watching base/foot/basket-ball? Because watching sports is exciting! And it is always a little more exciting when you have money riding on the outcome ;)
