Why do "health food companies" use palm oil?

Why do some so-called 'health food companies', including those specialising in organic ingredients use palm oil. Why do they not think it unethical to do so? Are they thus any better than any other food manufacturer, including 'big players' in the market, whose company aims are largely for profits/keeping shareholders happy?
