  1. Parmesan is the name of Cheese originated in Parma in Italy. Parmigiana is the name of dish made with Parmesan cheese, tomato sauce and the exemplar that is being cooked Veal, Chicken, or Egg plant.

  2. They're different things.  Parmesan is a type of cheese.  Parmigiana is a crumbed veal or chicken breast topped with tomato sauce, ham/bacon and mozarella cheese, grilled.

  3. Because that is how most countries spell it and when they come here it is easier for them to spell parmigiana instead of learning how to spell parmesan. The high chefs say parmigiana because it sounds more classy and they sound more like proffesionnals. Italiens say that alot.

  4. Parmigiana is an adjective. Parmesan is a noun. Simple as that.

  5. Parmesan is a type of cheese.

I think when we say veal parmigiana we are shortening "veal a la parmigiana", which means veal made in the style of Parma--ie, with tomato sauce and cheese.
