  1. The temperature in a canner with water boiling at 212ºF forces the air out of the jar -- which is why canning directions always warn to tighten the bands only 'finger tight' -- creating a vacuum. When the processed jars are removed from the canner the atmospheric pressure outside the jar is greater than the pressure inside. This difference in pressure pulls the self-sealing lid firmly against the rim of the jar as the contents cool, forming the critical airtight vacuum seal.


  2. Because the increase in pressure, decreases volume.
