Why do the roasted red peppers in the jar bubble?

Every time I buy a new jar, I try to use it quickly, but what's the average that they would go bad? Or is it normal for this gas to be happening? They smell fine and there's not any mold.

  1. As long as you are storing them as recommended on the jar and you do not surpass the expiration date, they should be fine.  Perhaps you live at a higher altitude than the location in which they were processed?
