what do they do to it that they call it corn beef?

Corning refers to meat that was been packed in salt.  They also make corned hams.  They are also packed in salt.  I also cook a corned ham at Christmas.  They are so great!!!

Corned refers to the old process of packing beef in salt that was the size of a corn kernel.

The modern process uses brining instead.  Brining is soaking the beef in a salt water solution.
